Mediterranean Herb Tofu Salad
A fresh, vibrant salad inspired by classic Mediterranean flavours, featuring our Tomato Herb Tofu gently infused with tomatoes, olives, and aromatic herbs.

Ingredients
For the salad
Tomato Herb Tofu, cubed
Mixed salad leaves (romaine, baby spinach, or rocket)
Cherry tomatoes, halved
Cucumber, sliced
Mixed olives
Red onion, thinly sliced
Fresh parsley or basil, finely chopped
Optional additions
Roasted red peppers
Capers
Toasted pine nuts or seeds
For the dressing
Extra virgin olive oil
Fresh lemon juice or red wine vinegar
Dijon mustard (optional)
Sea salt & cracked black pepper
Preparation
Prepare the tofu
Cut the Mediterranean Herb Tofu into bite-sized cubes. It’s ready to use straight from the pack, but you may lightly pan-sear it for 2–3 minutes if you prefer a warm, golden edge.Build the salad base
In a large bowl, combine the salad leaves, cherry tomatoes, cucumber, olives, and red onion.Add the tofu
Gently fold in the tofu cubes, taking care not to break them.Dress and finish
Whisk together olive oil, lemon juice, mustard (if using), salt, and pepper. Drizzle over the salad and toss lightly.Garnish and serve
Finish with fresh herbs and any optional toppings. Serve immediately with crusty bread or warm pita.
