Grilled Tofu & Roasted Pepper Panini

A fresh, vibrant salad inspired by classic Mediterranean flavours, featuring Tomato Herb Tofu gently infused with tomatoes, olives, and aromatic herbs.

Serves: 1 │ Preparation Time: 5 Min

Ingredients

  • Tomato & Herb Tofu – 80–100 g, sliced 1–1.5 cm thick

  • Roasted red peppers – 2–3 strips (jarred or house-roasted)

  • Vegan mozzarella slices – 2 slices

  • Black olive tapenade – 1 tbsp

  • Rocket (arugula) – handful

  • Vegan garlic aioli or vegan mayo – 1 tbsp

  • Panini bread or ciabatta – 1, sliced

  • Olive oil – for grilling

  • Balsamic glaze – very light drizzle (to finish)

Preparation

Grill the tofu

  • Heat a griddle or pan with a little olive oil

  • Grill tofu slices 2–3 minutes per side until golden and lightly crisp

  • No seasoning required (tofu is pre-flavoured)

Warm the peppers

  • Briefly heat roasted peppers on the same pan

Assemble the panini

  • Spread vegan aioli on both cut sides of the bread

  • Layer in order:

    • grilled Tomato & Herb Tofu

    • roasted red peppers

    • black olive tapenade (thin, even layer)

    • vegan mozzarella slices

    • Finish with rocket

Press & toast

  • Close sandwich and toast in a panini press

  • 3–4 minutes, until bread is crisp and vegan mozzarella is softened

Finish

  • Slice diagonally

  • Apply a very light drizzle of balsamic glaze over the cut sandwich or on the plate
