Basil & Olive Tofu Sandwich

A light, fragrant sandwich inspired by Tuscan flavours, perfect for effortless lunches and picnics.

Ingredients

  • Green Herb Tofu

  • Crusty sourdough, ciabatta, or focaccia

  • Fresh tomatoes, sliced

  • Cucumber or rocket leaves

  • Red onion, thinly sliced

  • Fresh basil leaves

For the spread

  • Dairy-free cream cheese or hummus

  • Extra virgin olive oil

  • Fresh lemon juice

  • Sea salt & cracked black pepper

Optional additions

  • Roasted red peppers

  • Olives, sliced

  • Balsamic glaze

Preparation

  1. Prepare the tofu
    Slice the Basil & Olive Tofu into even pieces. It can be used straight from the pack, or lightly pan-seared for 1–2 minutes per side if you prefer a warm sandwich.

  2. Build the salad base
    Lightly toast the bread until crisp on the outside but still soft inside.

  3. Add the tofu
    In a small bowl, mix the dairy-free cream cheese or hummus with a drizzle of olive oil, a squeeze of lemon juice, salt, and pepper.

  4. Dress and finish
    Spread generously on the bread. Layer the tofu slices, tomatoes, cucumber or rocket, red onion, and fresh basil.

  5. Garnish and serve
    Add any optional toppings, close the sandwich, and enjoy immediately.
