Tomato Herb Tofu Wrap
Soft flatbread filled with golden tomato & herb tofu, crisp salad, and a light garlic-lemon sauce. Fresh, savoury and protein-packed, perfect for lunch on the go.

Ingredients
Wrap & filling
1 large tortilla wrap or soft flatbread
100 g tomato & herb tofu, sliced or lightly pan-seared
½ cup mixed salad leaves (rocket, spinach or lettuce)
¼ cucumber, thinly sliced
4–5 cherry tomatoes, sliced
Thin slices of red onion (optional)
Simple garlic-lemon sauce
2 tbsp plant-based yoghurt or vegan mayo
½ tsp lemon juice
½ small garlic clove, finely grated
Salt & black pepper
Finish
Olive oil (optional drizzle)
Fresh herbs (parsley or basil)
Preparation
Prepare the sauce
Mix plant-based yoghurt, lemon juice, garlic, salt and pepper. Set aside.Heat the tofu (optional but recommended)
Lightly pan-sear tomato herb tofu in a dry or lightly oiled pan for 1–2 minutes per side until warm and lightly golden.Warm the wrap
Heat the flatbread briefly on a hot pan or grill so it’s soft and pliable.Assemble
Spread garlic-lemon sauce across the wrap.
Layer salad leaves, cucumber, cherry tomatoes and red onion.
Add tomato herb tofu slices and finish with herbs and a light olive oil drizzle.Wrap & serve
Fold tightly, cut in half, and serve warm or cold.

Add roasted peppers or grilled courgette for a heartier wrap
Works brilliantly with hummus instead of yoghurt sauce
